A lovely fresh dish to accompany any salad table...

I hesitate to give amounts as it really does depend on the size of the feast, so pour out the rice according to how many people you wish to serve.

You just need:
Mint...Preferably, fresh from the garden, mixed with a smidge of vinegar, a tsp of sugar and chopped finely. If not, use a couple of tablespoons of a shop bought mint sauce.
